Before you begin, I would suggest using a Digital SLR for this type of shot, as they are more responsive cameras than point and shoot and give you far more control over shutter speeds, ISO, aperture etc.
Having a little control over a camera’s shutter speed can do wonders. You can easily freeze an action, or produce some beautiful long exposure shots by varying shutter speed. The faster the shutter speed, the easier it is to stop action as in the photos above. This chart gives you a rough idea of the shutter speed required for various subjects.
But there is one major downside when freezing action entirely using fast shutter speed. You need lots of light, as a fast shutter speed reduces the amount of light reaching the camera sensor. You can play with aperture and ISO to aid with this, and try shooting with shutter priority – this comes in very handy, as your camera automatically sets the aperture to suit your chosen shutter speed.
